Blueberry or Cherry Cream Cheese Tarts

Ingredients

16 ounce Cream Cheese, softened
1 cup(s) sugar
1 teaspoon(s) vanilla
2 Eggs
12 Vanilla Wafers
1 can(s) Blueberry or Cherry Pie filling (or whatever flavor you prefer)

Makes 12 tarts

Preheat oven to 350 degrees. Place a paper cupcake liner in each cup of a muffin pan. Beat cream cheese with a handheld electric mixer until fluffy. Add sugar and vanilla, mixing well. Add eggs, one at a time, beating well after each addition. Place a vanilla wafer, flat side down, in cupcake liner. Spoon cream cheese mixture over wafers to approximately 2/3rds full. Bake for 20 minutes. Allow tarts to cool completely. Serve with blueberry or cherry filling on top, or filling of your choice.

Notes:Double the recipe, serve 12 with blueberry & 12 with cherry for 4th of July, great presentation and delicious!
